Raw and vegan apple pie

  • There is no debating that apple pie is a favorite in most households,  if not the most popular dessert in the world. But you get more health benefits if is raw and vegan.

  • This vegan apple pie recipe is a healthy alternative to “unhealthy, sugar laden ones”. It is raw, does not use heavy fats and is refined sugar-free. It is vegan too. A win-win.
  • Apples:
  • They are packed with antioxidants, which are important for our overall health. The old adage still holds it own: “Eat one apple a day to keep the doctor away” !
  • Cinnamon:
  • This potent spice is packed with health benefits. It boosts brain function, protects against heart disease because of calcium and fiber. Cinnamon also regulates blood sugar, and provides antimicrobial benefits.
  • Coconuts: 
  • The nectar made from coconuts is a great replacement for traditional sweeteners because coconuts are low in fructose and have a low glycemic index. This means that they do not cause major spikes in blood sugar.  
  • Dates:
  • These desert fruits are potent cancer fighters. Dates are also a natural laxative, help treat anemia, and boost energy.
  • Figs:
  • They are packed with health benefits, including the ability to treat diabetes, lower blood pressure, promote bone and heart health, and so much more.
  • Himalayan pink salt:
  • It contains the full spectrum of 84 minerals and trace elements just like Mother Nature intended. Himalayan pink salt is unrefined, unprocessed and “raw.”

  • 1 cup of walnuts
  • 1 cup of pecans
  • 2 cups of dates, pitted

  • Crust directions:
  • Pulse nuts coarse in a blender
  • Add dates, salt, and vanilla
  • Put crust in pie mold
  • Freeze 4 hours
  • Filling ingredients:
  • 1 cup of dates, pitted
  • 2 teaspoons of cinnamon
  • 7 apples cored and sliced
  • 1/2 teaspoon of nutmeg
  • 1 tablespoon of coconut nectar
  • Filling directions:
  • In a blender:
  • Puree 2 apples
  • Add dates, process until smooth
  • Layer 5 apples sliced on the pie crust
  • Cover with date mixture
  • Keep refrigerated
  • Make sure ingredients are organic.
